HOW DID I HEAL MY MICROBIOME AND DIGESTIVE SYSTEM?
Since the end of 2017, after taking a sequence genetics of the RNA of my microbiome_cc781905-5cde-3194-bb3b-136bad5cf58d, I had to enrich my digestive system and realize that I had to enrich and repair my digestive system. I decided to use two tools that I had on hand:
1)healed my leaky gutwith regenerative slow cooker broths and
2)I repopulated and enriched the diversity and bacterial richness of my microbiomewith the daily consumption of mother vinegar and ferments of all kinds: kimchis, sauerkrauts, jun + kombucha, probiotic sauces.
After 2 years of sustaining the consistency of this exercise and the intention to heal my digestive system, I was able to eat bread again after 20 years of not being able to eat bread, pizza or pasta because I didn't like them: I woke up bloated, with dark circles and tired. I defined myself as someone with a severe intolerance to incurable gluten.
Indeed, it was not an incurable condition but rather I had a compromised digestive system, weakened by a diet in my childhood that was varied (I grew up in Paris and we ate a lot out of Japanese, Chinese, Indian, French, etc) also at home I was exposed to a lot of industrialized food devoid of nutrients and genetic memory.
I then moved from Tokyo to NY in 2009 and was exposed to America's highly processed, denatured, and antibiotic-filled food for a while, before starting to investigate in 2010 how food is produced and its impact not only on our bodies and metabolism but also in soils and ecosystems around the world.
